Root Vegetable Slaw
- 2 large carrots
- 2 small red and/or orange beets
- 1 parsnip
- 1 celery root
- Juice of 1 fresh lemon
- 1 Tbsp apple cider vinegar
- Sea salt, fresh black pepper (ground), cayenne pepper – all to taste
Grate all the vegetables into a large bowl, using the widest size (approximately ¼ ” wide grater). Add the lemon juice, apple cider vinegar, sea salt, black and cayenne peppers, mix well and adjust seasonings to your liking.
Cover and refrigerate until ready to serve.
