Use organic root vegetables whenever possible, especially because root vegetables are in direct contact to absorb chemicals in the soil.

Serves 4


  • 2 large carrots
  • 2 small red and/or orange beets
  • 1 parsnip
  • 1 celery root
  • Juice of 1 fresh lemon
  • 1 Tbsp apple cider vinegar
  • Sea salt, fresh black pepper (ground), cayenne pepper – all to taste



Grate all the vegetables into a large bowl, using the widest size (approximately ¼ ” wide grater). Add the lemon juice, apple cider vinegar, sea salt, black and cayenne peppers, mix well and adjust seasonings to your liking.

Cover and refrigerate until ready to serve.
