Using a bell pepper in place of a tortilla, and a flavorful tomato sauce, ground turkey is an excellent way to be healthy and full at the same time.

Serves 4

Ingredients

  • 1 lb ground turkey
  • 3 Tbsp butter
  • 1 yellow onion, chopped
  • 1 tsp chili powder
  • Salt and pepper
  • 1 tsp garlic powder
  • 1/2 cup basmati rice, rinsed
  • 28 oz can tomato sauce, organic, reserve 1/4 cup for later
  • 4 green bell peppers
  • 1 Tbsp parsley, chopped, for garnish

Instructions

Preheat oven to 325 degrees.

Brown the onion in butter. Add ground turkey to the pan, along with chili powder, salt, pepper and garlic powder. When meat is partially browned add rice and tomato sauce and mix well.

Cut tops off of green bell peppers. Remove seeds and ribs and fill with mixture. Place peppers in a baking dish. Top off each pepper with 1 T of the remaining tomato sauce. Cover with a lid or foil and bake for 1 1/2 hours.
